Hopfenspinnerei

In spring 2017, Evelyn Bäck - until then a journalist, PR and marketing specialist, but also a hobby brewer and beer sommelier - founded Hopfenspinnerei as a nanobrewery in Walpersorf Castle near St. Pölten. The move from the desk to the brewing kettle has paid off: the natural beers have been reliably ranked at the top in various competitions and tastings. In 2018, the company expanded with the addition of partner Gwaël Gauthier and a small store for specialty beers in St. Pölten city center.

Of course, the 2020 pandemic quickly changed the situation. However, it was decided just as quickly that the pandemic-related standstill had to be used productively: Hopfenspinnerei goes Waldviertel! Evelyn Bäck and Gwaël Gauthier acquired a vacant mill in Waidhofen an der Thaya and adapted it for brewing operations. Brewing has been possible at the new location since fall 2021, and the sales and tasting area in the historic ensemble on the Thayaufer has also been in operation since summer 2022. During opening hours, beer is available to take away in bottles or to taste on tap. The range of beers is certified organic and includes the "Waidhofner Schlederwamperl" (blonde) and "Ziegengeist" (Altbier), two variants of the well-known, multi-award-winning Hopfenspinnerei standard. The range is supplemented by irregularly offered special brews. The popular home brewing workshops in the Waldviertel will of course continue - a separate workshop area has been set up for this purpose in the newly adapted brewery building. The brewery can also be visited on fixed dates. Attention: Limited number of participants - best to book online in advance!

And the next big project is already being planned: the completely preserved, historic "Bruckmühle" is to be refurbished and made accessible to visitors.
